To launch a Symphony Meeting, navigate to the Symphony chat room where you would like to start a Symphony Meeting and select the Meeting icon (Figure 1):

Then select Meeting again (Figure 2):

This will start your meeting and send out a notification prompt to the people in the direct chat or chat room to join you.
Note: The current default limit for a meeting is 100 members. This figure may vary depending on your company policy.
All ongoing meetings will automatically be placed in your Ongoing Meetings folder at the top of your chat list (Figure 3):

Note: This folder will automatically disappear when you have no active meetings.
